Sorbic acid E200 - carboxylic acid is used in the food industry as a preservative. It is a food additive that effectively inhibits the growth of bacterial flora in food products. Sorbic acid is effective in the production of cheese because it has a reduced effect on lactic acid bacteria. The preservative effect of sorbic acid increases in the presence of sodium chloride (table salt), sugar, phosphates. Sorbic acid is used in the production of lemonades, fruit drinks, e.g. cider. It maintains the humidity of products such as cheese, cheesecakes, confectionery. It is also used in the production of mouthwashes, toothpastes and dental ointments. Sorbic acid has also been used in the production of cosmetics due to its mildew-killing, yeasticidal and fungicidal properties.
