Hydrated food citric acid E330 , more commonly known as citric acid, commonly used in food products - code designation E330 - as an acidity regulator, and thus an ingredient that extends the life of products. It is not a preservative, but by lowering the pH, it increases the durability of some vitamins and nutrients. Citric acid is an organic compound from the group of hydroxycarboxylic acids, obtained by chemical synthesis or by lemon fermentation of purified sugar or starch hydrolyzate using mold cultures. Mentions of its carcinogenic effect are not confirmed.

Citric acid hydrated food E330 is used in the food industry as an additive responsible for the pH level - acidity regulator - and an antioxidant. Citric acid itself - E330 - contrary to popular belief, is not a preservative, but adding even a small amount of it significantly lowers the pH, which results in the creation of an acidic environment, friendly to, for example, vitamins. Thanks to such conditions, vitamins and other important ingredients of food products have a longer lifespan. The level of use in products is not defined or limited in any way. It is used, among others, in the production of chocolate and cocoa products, fruit preserves, unprocessed fish, crustaceans, molluscs, as well as in the packaging of freshly minced meat. In cosmetics, its antioxidant properties are used to fight free radicals, which limits damage to skin cells and slows down the processes of its creation.
